Tasty Chicken Casserole

Chicken Casserole – Tasty and simple to prepare. Use chicken fillets if you prefer, however, chicken pieces will give extra flavour
- Chicken – 4 chicken breasts or 6 pieces
- 4 streaky rashers chopped
- 250g mushrooms sliced
- 150g frozen peas
- 1 onion
- 2 gloves of garlic
- 2 sticks of celery finely chopped
- 3 carrots peeled and chopped
- Chicken stock
- Fresh herbs (parsley and thyme work best)
- Salt & Pepper to season.
- Brown the meat in a pan
- Transfer to an oven proof dish
- add the remaining ingredients
- cover with stock
- cook at 180ºC for 45 minutes.
- Serve with rice or mashed potatoes.
